Domaine Jean Dauvissat Pere et Fils produce high quality Chablis in small amounts each year. Derived from their oldest vines, planted between 1950 and 1960 on the plateau of Chapelle Vaupelteigne. These 60 year old vines have very deep roots, directly in contact with the limestone bedrock, which gives the wine a profound minerality. The low yields of the old vines add significant complexity to this Chablis.
On the nose: Lime, lemon and elegant floral notes.
On the pallet: Refined citrus fruit complimented by well rounded acidity, a silky texture and sharp minerality.
Food match: Perfect with seafood – scallops or prawns.
