Grilled Chicken Thighs | 60 Minutes Chicken Thighs are one of the most flavourful and delicious parts of the chicken. Darker meat, with a crispy skin. Whether you like boneless, or bone-in thighs, both are simple and delicious. Buy a big pack, split them all up, try different marinades. You can create a wonderful mix of flavours with relatively little effort. Wine Pairing for Grilled Chicken Thighs: White Wine - A wine with reasonable acidity is key for this particular style. The acidity will help it cut through the fatty butter and rich honey. However, the wine must retain a relatively medium body. This prevents it from overpowering the chicken, while not getting drowned out by the rich, creamy glaze. We've opted for a Sémillon. Medium to High acidity, with enough body to fulfil this role nicely.

Ingredients
  • 8 Chicken Thighs
  • 100g Unsalted Butter
  • Juice of 1/2 a Lemon
  • 4 Cloves of Garlic
  • 1 Tablespoon of Honey
  • 25g Flat Leaf Parsley
  • 1 tsp of Paprika
Method
  • Step 1

    Grilled Chicken Thighs are a simple, delicious treat. Part of the appeal comes in the versatility. You can try out any number of marinades to fit your palate perfectly. However, we’ve opted for a Honey-Butter Glaze in this instance. The first step here is to soften the butter and fold in the garlic, honey, chopped parsley and paprika. Make sure to add a good pinch of salt and pepper.

  • Step 2

    Score the skin of the chicken thighs and rub this mix into the soon to be Grilled Chicken Thighs. If you want, you can let this marinade into the chicken for as long as you’ve got. We’d recommend at least 15 minutes.

  • Step 3

    Heat some oil into a pan over moderate heat. Then, place the chicken into the pan, skin side down, for around 5 minutes. This allows the skin to get nice and crispy, before placing them onto the grill. Be careful not to burn the skin here.

  • Step 4

    Place the chicken thighs onto the grill, turning occasionally for around 20 minutes. You’re looking for nice even charred spots and the chicken to be just cooked through.

  • Step 5

    Remove from the grill to cool, squeeze a bit of lemon juice over the top and sprinkle with some more fresh parsley. Simple Grilled Chicken Thighs – delicious!
