Halloumi Burgers | 30 Minutes Brioche bun, grilled halloumi and a portobello mushroom can make a lot of problems seem smaller. That squeakiest of cheese which has a wonderful texture when grilled is always a welcome treat. Add to it the rich, earthy mushroom, fresh salad and that sweet brioche bun. A real treat. Wine Pairing for Halloumi Burgers: Red Wine - The fat content of the brioche, cheese and even the hummus means we want a good deal of acidity. A wine with an earthy component will also aid the portobello mushroom. However, we don't want a wine that is overly tannic, or full bodied, to completely drown out the tasty burger. So, we're opting for a Barbera. Smooth, acidic and low tannin red wine from Northern Italy. Perfect!

  • 250g Block of Halloumi
  • 4 Portobello Mushrooms
  • 60g of Hummus
  • 4 Brioche Buns
  • 1 Avocado
  • 1/2 Red Onion
  • 1 Head of Baby Gem Lettuce
  • 1 Salad Tomato
  • Step 1

    Halloumi Burgers need halloumi. So, start by slicing your halloumi into either 8 thin slices, or 4 thick ones. These can be distributed evenly amongst the Halloumi Burgers.

  • Step 2

    Heat a grill pan and brush lightly with olive oil. Add the halloumi and portobello mushrooms until they have a nice even sear to them.

  • Step 3

    While the halloumi and mushrooms are cooking, toast your brioche buns. This can done by putting them in the oven, or simply a toaster.

  • Step 4

    Spread the hummus on the toasted buns, then assemble the burger. This includes the lettuce, red onion, tomato, avocado, halloumi and mushroom. It’s best to layer the mushroom first, followed by the halloumi. Then, you can arrange the salad in the way you see fit.

  • Step 5

    Now squish that Halloumi Burger between your hands and enjoy! Be careful, it can be a bit messy.
