Ingredients
- 2 Pears
- 1 Cinnamon Stick
- 300ml Water
- 200g Caster Sugar
- 750ml Prosecco

Step 1
Let’s look at how to make a spiced pear Bellini. The first step is making the pear purée. It’s easier than it sounds.

Combine the water, caster sugar and cinnamon stick. Then, bring this to a simmer. Simmer for 10-15 minutes and allow it to cool.

Peel and dice the pears. Now, you’ll want to blend this with the simple syrup which you’ve prepared. Remember to remove the cinnamon. If it’s too thick, carefully add a touch more water.

Now, you want to spoon around 1 tablespoon of the purée into each glass, (flutes work best). Any excess purée can be stored in the fridge for a day or two.
