How To Make A Kalimotxo Mixing red wine and coca-cola might sound more like the behaviour of students on a budget, than wine lovers. However, this is a drink which has found a great deal of popularity in the Basque region of Spain during the second half of the 20th century. Kalimotxo, (pronounced cali-mot-cho), can be seen as another variation of Sangria and Tinto Verano. It’s a simple mixture of readily available ingredients which can create a more refreshing variation of red wine at a low price point. But, is it any good? It is born out of a need to mask flaws in wine which had been stored poorly. The syrupy sweetness would mask the bitter, unbalanced wines. Although today, it’s found legs in its own right. We wouldn’t recommend cutting your aged Bordeaux red with it, but if the sun is out and you’ve got a cheap bottle of red, it can be a great choice. It lowers the alcohol content and provides balance to the acidity in the wine. If you’re kicking back with some friends and enjoying a few nibbles, then it’s well worth a go!

    Add a twist of lemon to the top of the glass.
