How To Make Watermelon and Feta Salad | 30 Minutes White Wine Pairing - Palazzo del Mare Catarratto The wine comes from the Catarratto grape. A native Sicilian variety that is absolutely packed full of super ripe fruit flavours which work well with the honeyed dressing, while being accentuated by that salty feta. Yet, it also provides a subtle almond flavour that just provides an extra quality to the savoury salad. Perhaps most crucially it is also wonderfully crisp and light so as to not overpower the delicate flavours of the salad, while retaining a nice hit of acidity that will cut through the fatty cheese.

Ingredients
  • 500g Watermelon Cubes
  • 200g Feta
  • 30g Hazelnuts
  • 150g Rocket
  • 75g Cucumber
  • 30ml Olive Oil
  • 15ml Fresh Lemon Juice
  • 15ml Runny Honey
Method
  • Step 1

    Let’s learn how to make Watermelon and Feta Salad. First, quarter your watermelon and carefully remove the rind from one quarter. Then, dice the watermelon into bite-size chunks. (If you want to buy pre-prepared watermelon, we wouldn’t blame you!)

  • Step 2

    Half the cucumber, deseed and slice into half rounds.

  • Step 3

    Crumble the feta and roughly chop the hazelnuts, before combining all the ingredients in a salad bowl.

  • Step 4

    Combine the olive oil, lemon juice and honey separately and pour over the salad ingredients.

  • Step 5

    Toss the salad until the dressing is coating all the ingredients. Then, add salt and pepper to taste.
