How To Make Wild Garlic Pesto Have you ever been walking through a woodland or forest area and been struck with the powerful and unmistakable smell of garlic? If so, then you’ve likely been near a big patch of wild ramson leaves. Right through April and into June the Ramsons, which are also known as ‘Wild Garlic’, flourish in woodland areas across the UK. This wild plant is a relative of chives and is easy to identify by the pungent smell of garlic. You can gather up handfuls of the leaves, sort out any undesirable strays and take it home. Once they’re all washed, you can use them in salads, bread-making, soup, butter, mayonnaise, but our favourite use is wild garlic pesto. Get yourself out into nature and get picking. Once you’ve got a tub of wild garlic pesto in your fridge, it’ll be a great addition to salmon, chicken, pasta and salads - along with many other dishes. Just remember to not take so much that it’ll affect the ecosystem, or more than you plan to consume. Don’t trample any surrounding plants or wildlife and don’t uproot any plants. Be sure to check with national or woodland trust guidelines, if you want to know more about foraging. It is also worth noting that Wild Garlic, (with its sprouting white buds), can bear a resemblance to ‘Lily of the Valley’ which is not edible. However, the pungent garlic aroma should be a clear indication that you’ve found Wild Garlic. Now, onto our Wild Garlic Pesto Recipe.

  • 100g Wild Garlic
  • 50g Pine Nuts
  • 50g Parmesan
  • 45ml Extra-Virgin Olive Oil
  • Juice of half a Lemon
  • Step 1

    Let’s learn how to make Wild Garlic Pesto. Muddle the wild garlic with a pinch of sea salt and some cracked black pepper until it becomes a rough paste.

    Then, combine the paste and pine nuts. Slowly bash them together and add the olive oil bit by bit.

  • Step 3

    Once the paste has become smooth, add finely grated parmesan and stir together.

  • Step 4

    Finally, add the lemon juice and continue to mix until the paste is really smooth. You can now season with salt and black pepper to taste. You can also add more oil to get a more liquidy consistency. Now you know how to make Wild Garlic Pesto.
