Mini Rosemary & Onion Quiches | 60 Minutes These make wonderfully indulgent little treats. They're also refreshingly easy to make. Enjoy them fresh out the oven, or keep them in the fridge as little treats to munch on through the week. Wine Pairing for Mini Rosemary & Onion Quiches: Red Wine - People may think that white wine is the way to go for a meat-free pastry such as this. However, we think an Austrian Zweigelt presents itself as an interesting and delicious wine pairing. Zweigelt is low tannin and often light in body. This will prevent it from over-powering the mini quiches. Zweigelt is also relatively high in acidity. This means it'll cut through the fatty cheese and egg mix. Finally, the subtle spice notes that accompany Zweigelt will only add to the already herbaceous mini quiches.

Ingredients
  • 320g Pre-Rolled Shortcrust Pastry
  • 1 1/2 Brown Onions
  • 2 Cloves of Garlic
  • 40g Baby Spinach
  • 3 Sprigs of Fresh Rosemary
  • 3 Medium Eggs
  • 50ml Milk
  • 50g Mature Cheddar
  • 50g Cranberry Wensleydale
Method
  • Step 1

    Mini Rosemary & Onion Quiches are a wonderful treat and using pre-rolled pastry can be a great time saver to keep things simple.

    Using a muffin tin, push the pre-rolled dough to the edges. Then, poke a few fork holes in the base of the casing.

  • Step 2

    Preheat the oven to 220 degrees centigrade.

  • Step 3

    Bake the quiche cases for 10 minutes.

  • Step 4

    Time for some prep. Dice the brown onions. Then, finely slice the garlic and the rosemary. After that, grate the cheese.

  • Step 5

    In a saucepan, over a medium heat, fry off the onions until they begin to caramelise, add salt and pepper. Then, add the garlic and rosemary and fry for a further minute.

  • Step 6

    In a separate jug, add the eggs, milk and cheese. After that, add the onion mix and stir.

  • Step 7

    Remove the muffin tray from the oven and portion out the quiche mixture into the muffin tins.

  • Step 8

    Bake the Mini Rosemary & Onion Quiches for 15 to 20 minutes, until the quiche tops and casings begin to brown evenly.

    Leave to cool and serve. You should get about 8 Mini Rosemary & Onion Quiches from this recipe.
