Wine Pairing for Mini Rosemary & Onion Quiches: Red Wine - People may think that white wine is the way to go for a meat-free pastry such as this. However, we think an Austrian Zweigelt presents itself as an interesting and delicious wine pairing. Zweigelt is low tannin and often light in body. This will prevent it from over-powering the mini quiches. Zweigelt is also relatively high in acidity. This means it'll cut through the fatty cheese and egg mix. Finally, the subtle spice notes that accompany Zweigelt will only add to the already herbaceous mini quiches.
