- 100g Mixed Salad Leaves
- 200g Pecorino Cheese
- 2 Ripe Figs
- 50g Walnuts
- 15g Fresh Thyme
- 50ml Olive Oil
- 1 tbsp Balsamic Vinegar

Step 1
Pecorino Walnut & Fig Salad is really elevated by the addition of Thyme-Infused Olive Oil. It’s best to make this first, to allow it time to cool. You can also make it well ahead of time.
Simply, add the thyme and oil to a blender or food processor and give it a whizz. Then, add this to a pan and heat until it begins to simmer. Strain this through a sieve and allow to cool There you have it – flavoured olive oil.

Next, it’s time to assemble the salad. Begin by roughly chopping the pecorino and walnuts.

Then, slice the figs into eight even sections. Make sure they are ripe.

Step 4
Scatter the figs and pecorino into the salad leaves and give it a brief toss.

Step 5
Plate the salad and rest the figs on top of it.
