Likely, as Vienna was once the centre of the Austro-Hungarian Empire. Blaufränkisch has a great herbaceous character, with strong peppery notes. It will mix with the rich tomato flavours, as well as the earthiness from the potatoes.

Ingredients
  • 1 Brown Onion
  • 4 Cloves of Garlic
  • 5 Gold Yukon or Red Potatoes
  • 4 tsp of Paprika
  • 1 Red Pepper
  • 750ml Vegetable Stock
  • 3 tbsp Tomato Paste
  • 1 tbsp Cornstarch
  • 60ml Water
  • 30g Flat Leaf Parsley
Method
  • Step 1

    Potato Goulash is a wonderful winter-warmer and a great way to pack some vegetables into your diet. First, you’ll want to dice your onions and add them to a saucepan on medium heat. Sauté until they’re softened. Make sure to add a good chunk of salt and pepper. Then, add diced garlic and cook for a further minute.

  • Step 2

    Cut your potatoes into chunks and add them to the pan, along with the paprika, vegetable stock and tomato paste. Mix this all together.

  • Step 3

    Once the liquid has started to boil, drop the temperature down and let it simmer for around 30 minutes. Remember to stir it regularly. The key here is to get the potatoes to soften.

  • Step 4

    Dissolve the cornstarch in the water and mix it up into a slurry.

  • Step 5

    Add this slurry to the simmering Potato Goulash and stir. You want to combine this fully. At this step the Potato Goulash will really start to thicken up.

  • Step 6

    Serve the Potato Goulash. Then, chop up your fresh parsley and sprinkle it over the top. Serve with some buttered rye bread.
