The Perfect Pancakes | 45 Minutes Learn how to make The Perfect Pancakes, with the recipe that comes straight from the bottom of the so-called Perfect Pancake Pan. Pancakes needn't be confined to one-day a year. They're a wonderful breakfast, dessert, or just a treat for any time of the day. Once you've got the mix right, you'll be making perfect pancakes every time, in no time. You might even successfully flip a few! Wine Pairing for the Perfect Pancake: Fortified & Dessert Wine - The little accoutrements that come with our perfect pancakes, namely fresh berries and Nutella, or another chocolate spread, lend themselves perfectly to Port. The Port gives off rich flavours of honey, caramel and toffee to add to the indulgence, while that delicate but discernible spirit punch stops the flavours from becoming cloying.

Ingredients
  • 2 Eggs
  • 110g Plain Flour
  • 200ml Milk
  • 75ml Water
  • 75g Melted Butter (half for the batter, half for cooking)
  • Pinch of Salt
  • 30g Nutella
  • 15ml Double Cream
  • Handful of Fresh Berries, (we chose raspberries)
Method
  • Step 1

    For the Perfect Pancakes, the first step is to combine the flour and eggs, then gradually whisk in the other ingredients, (except the butter), to form a batter.

  • Step 2

    Let the batter stand for around 30 minutes, then add half the melted butter and whisk further.

  • Step 3

    Add the rest of the butter into a medium-heat pan.

  • Step 4

    Ladle the batter into a buttered pan and cook on each side for around one minute. One healthy ladle in a good sized pan should mean that you get a nice thin pancake. However, a bit of trial and error may be needed to find what thickness is your personal favourite.

  • Step 5

    Now, for the toppings. Slowly combine the cream and Nutella in a saucepan, over a low heat. This will create a really decadent syrupy topping. Drizzle this over the top of the Perfect Pancakes and add a handful of fresh berries. We think raspberries work particularly well. However, picking berries that are seasonal is a really great way to go.
