Tomato Rellenos | 15 Minutes This is a classic Chilean dish. It is essentially ‘Stuffed Tomatoes’. This can be served cold, but you can also bake it, if you’re looking for a hot dish. There are variations of this dish across the world, but this is one you’d likely be able to find in Chile.

  • 200g Cooked Rice
  • 4 Large Tomatos
  • 2 Cans of Tuna
  • 1/2 Red Onion
  • 45g Mayonaise
  • 1 Large Carrot
  • 1/2 Green Bell Pepper
  • 45g Green Olives
  • 25ml Lime Juice
  • Step 1

    1) Tomato Rellenos is a great simple dish. To begin prepping, simply cut the top cap off the tomato and use a spoon to scrape out all the seeds and flesh.

    2) Finely dice the onion, pepper and olives, then grate the carrot.

    3) Combine these ingredients with the rice, mayonnaise, tuna and lime juice, Then, mix until it’s one smooth paste.
